Almond Flour Waffles

Ingredients

  • 1 cup almond flour
  • 1/2 Tbsp baking powder
  • 1/4 tsp salt
  • 1 cup heavy cream
  • 2 Tbsp olive oil
  • 3 eggs
  • 1 Tbsp cinnamon or pumpkin pie spice (optional)

Instructions

1. In a large bowl, whisk together almond flour, baking powder, salt, and cinnamon/pumpkin pie spice.

2. Add cream, oil and eggs. Mix until well blended.

3. Spray heated waffle iron with non-stick cooking spray. Pour in batter and cook until golden, about 4-5 minutes.

4. Top with your choice of toppings: sugar free syrup, butter, peanut butter, nut butter, whip cream etc.

 

Nutrition: serves 3; 475 calories, 5gm net carbs, 8gm protein.
