Bacon Cheeseburger Casserole
Ingredients
- 2 lbs ground beef
- 2 cloves garlic, minced
- 1/2 tsp onion powder
- 1 lb bacon, cooked and chopped
- 8 eggs
- 1 can (6 oz) tomato paste
- 1 cup heavy cream
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 cups shredded cheddar, divided
Instructions
- Brown ground beef with garlic and onion powder.
- Drain excess grease, mix with cooked bacon pieces, then spread evenly into a 9x13 inch casserole pan.
- In a medium bowl, whisk together eggs, tomato paste, heavy cream, salt and pepper.
- Stir 2 cups of the shredded cheddar cheese into the egg mixture and pour over top of the beef/bacon.
- Top with the remaining 1 cup of cheddar cheese.
- Bake at 350o F for 30-35 minutes or until the cheese is golden brown.
