Bacon Cheeseburger Casserole

Ingredients

  • 2 lbs ground beef
  • 2 cloves garlic, minced
  • 1/2 tsp onion powder
  • 1 lb bacon, cooked and chopped
  • 8 eggs
  • 1 can (6 oz) tomato paste
  • 1 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 cups shredded cheddar, divided

Instructions

  1. Brown ground beef with garlic and onion powder.
  2. Drain excess grease, mix with cooked bacon pieces, then spread evenly into a 9x13 inch casserole pan.
  3. In a medium bowl, whisk together eggs, tomato paste, heavy cream, salt and pepper.
  4. Stir 2 cups of the shredded cheddar cheese into the egg mixture and pour over top of the beef/bacon.
  5. Top with the remaining 1 cup of cheddar cheese.
  6. Bake at 350o F for 30-35 minutes or until the cheese is golden brown.
