Biscuits and Gravy

Ingredients

Biscuits

  • 2 oz cream cheese
  • 2 cups shredded mozzarella
  • 2 eggs, beaten
  • 1 cup almond flour

Sausage Gravy

  • 1 lb pork sausage
  • 4 oz cream cheese
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 tsp xanthan gum
  • salt and pepper, to taste

Instructions

Biscuits

  1. In a microwave safe bowl, add cream cheese and mozzarella.
  2. Microwave in 30 second intervals, stirring well in between until softened.
  3. In a separate bowl, mix almond flour and eggs. Add cheese mixture and stir until well combined. Dough will be sticky.
  4. Place dough in plastic wrap and refrigerate until firm.
  5. Heat oven to 400o F. Separate refrigerated dough into 6 biscuits, and place in a greased muffin pan.
  6. Bake for 12-15 minutes, until golden and set on top.

Sausage Gravy

  1. In a large skillet, brown and crumble the sausage. Do not drain.
  2. Add cream cheese and stir until melted. Add heavy cream, chicken broth, and xanthan gum and stir.
  3. Reduce heat and simmer until gravy has thickened. Season with salt and pepper.

To serve, cut biscuits in half and spoon sausage gravy on top.
