4 cups broccoli, chopped
1 T butter
3 ½ cups chicken or vegetable stock
3 cups shredded cheddar cheese
1 cup heavy cream
salt and pepper, to taste
1. In large saucepan over medium heat, add butter and garlic. Sautee for 1 minute until garlic is fragrant.
2. Add chicken/vegetable broth, heavy cream, and chopped broccoli. Increase heat to a boil, then reduce and simmer for 10-20 minutes, until broccoli is tender.
3. Add the shredded cheddar gradually (1/2 cup at a time), stirring constantly until melted. Avoid high heat to prevent cheese from clumping.
4. Season with Salt and Pepper.
