Buffalo Chicken Tenders
Ingredients
- 1 lb chicken breast tenders
- 1 large egg
- 1 Tbsp heavy whipping cream
- 1 1/2 cups crushed pork rinds
- 1/2 cup parmesan cheese, grated
- 1/2 tsp garlic powder
- 3/4 cup buffalo wing sauce
- 2 Tbsp butter
Instructions
- Preheat oven to 350oF.
- Beat egg and heavy cream together and set aside in a bowl.
- In a food processor, combine pork rinds, parmesan cheese, and garlic powder. Pulse until ingredients are well combined.
- Dip each chicken tender first in the egg/cream mixture, and then press firmly in the breading mixture, coating both sides.
- Place chicken on a baking sheet that is lightly greased or lined with parchment paper.
- Bake for 30 minutes, flipping half way through. If they're not crispy enough after 30 minutes, broil for 2-3 minutes.
- Melt the butter and mix with the buffalo sauce. Lightly toss the tenders in the sauce, or use for dipping.
