Buffalo Chicken Tenders

Ingredients

  • 1 lb chicken breast tenders
  • 1 large egg
  • 1 Tbsp heavy whipping cream
  • 1 1/2 cups crushed pork rinds
  • 1/2 cup parmesan cheese, grated
  • 1/2 tsp garlic powder
  • 3/4 cup buffalo wing sauce
  • 2 Tbsp butter

Instructions

  1. Preheat oven to 350oF.
  2. Beat egg and heavy cream together and set aside in a bowl.
  3. In a food processor, combine pork rinds, parmesan cheese, and garlic powder. Pulse until ingredients are well combined.
  4. Dip each chicken tender first in the egg/cream mixture, and then press firmly in the breading mixture, coating both sides.
  5. Place chicken on a baking sheet that is lightly greased or lined with parchment paper. 
  6. Bake for 30 minutes, flipping half way through. If they're not crispy enough after 30 minutes, broil for 2-3 minutes.
  7. Melt the butter and mix with the buffalo sauce. Lightly toss the tenders in the sauce, or use for dipping.
