Cut chicken breasts, bell peppers, and onion into thin strips.
Mix spices together in a bowl.
Toss spices, chicken, and vegetables together to coat evenly. Divide into 4 servings and wrap in individual foil packets, adding about 1/2 Tbsp of butter to each packet.
Grill for 20-25 minutes, or bake in oven at 400oF for 20-25 minutes, until chicken is cooked through.
Serve with warmed low-carb tortillas or riced cauliflower.
