Chicken Fajita Foil Packets

Ingredients

  • 1.5 lbs chicken breasts, cut into strips
  • 3 bell peppers
  • 1 red onion
  • 2 Tbsp chili powder
  • 2 Tbsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 2 Tbsp butter

Instructions

  1. Cut chicken breasts, bell peppers, and onion into thin strips.
  2. Mix spices together in a bowl.
  3. Toss spices, chicken, and vegetables together to coat evenly. Divide into 4 servings and wrap in individual foil packets, adding about 1/2 Tbsp of butter to each packet.
  4. Grill for 20-25 minutes, or bake in oven at 400oF for 20-25 minutes, until chicken is cooked through.
  5. Serve with warmed low-carb tortillas or riced cauliflower.
