Chocolate Chip Cookies
Ingredients
- 2 1/2 cup Almond Flour
- 2 Tbsp Coconut Flour
- 1 Tbsp Baking Powder
- 1Tbsp Xanthan Gum
- 1/4 tsp Salt
- 1 1/3 cup Swerve granulated sweetener
- 11 Tbsp Butter
- 1 tsp Vanilla Extract
- 2 Large Eggs
- 1 Cup Sugar Free Chocolate Chips
Instructions
- Preheat Oven to 325 F, line 2 baking sheets with parchment paper.
- In large mixing bowl, use electric beater to cream butter and swerve until well combined.
- Add eggs and vanilla extract, beat with butter/swerve.
- In separate large mixing bowl, combine dry ingredients: almond flour, coconut flour, baking powder, salt, and xanthan gum. Stir until combined.
- Add dry ingredients to the wet ingredients and use mixer until combined.
- Fold-in sugar free chocolate chips.
- Place Tbsp size spoonfuls on cookie sheet 1 1/2 inches apart.
- Bake for 12-15 minutes, or until cookies are browned on the bottom.
- Remove and cool for approx 20 minutes until cookies firm.
