Chocolate Chip Cookies

Ingredients

  • 2 1/2 cup Almond Flour
  • 2 Tbsp Coconut Flour
  • 1 Tbsp Baking Powder
  • 1Tbsp Xanthan Gum
  • 1/4 tsp Salt
  • 1 1/3 cup Swerve granulated sweetener
  • 11 Tbsp Butter
  • 1 tsp Vanilla Extract
  • 2 Large Eggs
  • 1 Cup Sugar Free Chocolate Chips

Instructions

  • Preheat Oven to 325 F, line 2 baking sheets with parchment paper. 
  • In large mixing bowl, use electric beater to cream butter and swerve until well combined.
  • Add eggs and vanilla extract, beat with butter/swerve.
  • In separate large mixing bowl, combine dry ingredients: almond flour, coconut flour, baking powder, salt, and xanthan gum. Stir until combined.
  • Add dry ingredients to the wet ingredients and use mixer until combined.
  • Fold-in sugar free chocolate chips. 
  • Place Tbsp size spoonfuls on cookie sheet 1 1/2 inches apart. 
  • Bake for 12-15 minutes, or until cookies are browned on the bottom. 
  • Remove and cool for approx 20 minutes until cookies firm.
