1. Combine all ingredients and mix well. A hand mixer or magic bullet works well.
2. On medium-high heat, melt butter in a non-stick frying pan.
3. Divide batter into as many pancakes as desired. Cook on each side for 1-2 minutes, making sure each side is a nice golden brown.
4. Serve with your choice of topping: sugar free syrup, peanut butter, nut butter, whip cream, etc.
