Crock-Pot Beef Fajitas

Ingredients

  • 2 lbs beef, sliced
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 1 jar (16oz) salsa
  • 2 tbsp fajita seasoning
  • 4 tbsp sour cream
  • 4 carb smart tortillas (optional)

Instructions

  1. Add salsa to the bottom of the slow cooker.
  2. Add beef, peppers, onion, and fajita seasoning. Stir to mix well.
  3. Cook on low for 6-8 hours, or high 3-4 hours.
  4. Serve with low carb tortillas and sour cream. 

Nutrition: serves 4; 450 calories, 3gm net carbs, 50gm protein.
