Crustless Spinach & Feta Quiche

Ingredients

  • 1 tbsp butter
  • 10 large eggs
  • 1 cup heavy whipping cream
  • 2 cups spinach, chopped
  • 3/4 cup crumbled feta cheese
  • 1/2 cup grated parmesan cheese
  • 2 garlic cloves, minced
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/4 cup cheddar cheese

Instructions

  1. Coat the inside of the slow cooker insert with the butter.
  2. In a separate bowl, whisk together the eggs and heavy cream and pour into the slow cooker.
  3. Stir in the spinach, feta and parmesan cheeses, garlic, pepper, and salt.
  4. Sprinkle the cheddar cheese over the top. Cover and cook for 7 hours on low.
