Dark Chocolate Peppermint Brownies

Ingredients

  • 1/2 cup almond flour
  • 10 Tbsp butter, softened
  • 3 eggs
  • 1/4 cup cocoa powder
  • 2 oz dark chocolate (at least 85% cocoa)
  • 1/2 cup granulated Swerve sweetener
  • 1/4 tsp xanthan gum
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1 peppermint candy cane

Instructions

  1. Preheat oven to 350oF and line an 8x8 inch baking pan with parchment paper.
  2. In a small bowl, melt butter and dark chocolate together in the microwave - about 1 minute, stirring halfway through.
  3. In a separate bowl, beat together eggs, vanilla, sweetener, and the melted butter/chocolate until well combined.
  4. Combine dry ingredients - almond flour, cocoa powder, xanthan gum, baking powder and mix into egg/butter/chocolate mixture slowly.
  5. After pouring the batter into the baking pan, crush the candy cane in a small plastic bag using a rolling pin and sprinkle on top of the batter.
  6. Bake for 15-20 minutes.
