Dark Chocolate Peppermint Brownies
Ingredients
- 1/2 cup almond flour
- 10 Tbsp butter, softened
- 3 eggs
- 1/4 cup cocoa powder
- 2 oz dark chocolate (at least 85% cocoa)
- 1/2 cup granulated Swerve sweetener
- 1/4 tsp xanthan gum
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1 peppermint candy cane
Instructions
- Preheat oven to 350oF and line an 8x8 inch baking pan with parchment paper.
- In a small bowl, melt butter and dark chocolate together in the microwave - about 1 minute, stirring halfway through.
- In a separate bowl, beat together eggs, vanilla, sweetener, and the melted butter/chocolate until well combined.
- Combine dry ingredients - almond flour, cocoa powder, xanthan gum, baking powder and mix into egg/butter/chocolate mixture slowly.
- After pouring the batter into the baking pan, crush the candy cane in a small plastic bag using a rolling pin and sprinkle on top of the batter.
- Bake for 15-20 minutes.
