Egg Muffins
Ingredients
- 1 lb ground Sausage
- 6 large Eggs
- 1/2 cup Heavy Cream
- 1/4 Onion, minced
- 1/4 Red Pepper, minced
- 1 cup shredded Cheddar Cheese
Instructions
- Preheat oven to 350 degrees.
- Brown Sausage over medium heat until fully cooked.
- Spray muffin tin with cooking spray.
- Mix the Sausage, minced Onion, and minced Pepper together and divide evenly into bottom of muffin tin.
- Spread shredded Cheese on top of the sausage.
- In large bowl, whisk Eggs and Heavy Cream. Pour mixture over the sausage and cheese until tin is full.
- Bake for 20-25 minutes, or until set. Serve warm.
- Muffins freeze well.
