Egg Muffins

Ingredients

  • 1 lb ground Sausage
  • 6 large Eggs
  • 1/2 cup Heavy Cream
  • 1/4 Onion, minced
  • 1/4 Red Pepper, minced
  • 1 cup shredded Cheddar Cheese

Instructions

  1. Preheat oven to 350 degrees.
  2. Brown Sausage over medium heat until fully cooked.
  3. Spray muffin tin with cooking spray. 
  4. Mix the Sausage, minced Onion, and minced Pepper together and divide evenly into bottom of muffin tin.
  5. Spread shredded Cheese on top of the sausage.
  6. In large bowl, whisk Eggs and Heavy Cream. Pour mixture over the sausage and cheese until tin is full. 
  7. Bake for 20-25 minutes, or until set. Serve warm. 
  8. Muffins freeze well. 

Nutrition: makes 12 muffins; 205 calories, 0 net carbs, 13gm protein per muffin. Serving size 2 muffins.
