Fried Cauliflower Rice

Ingredients

  • 1 package frozen riced cauliflower
  • 1/3 package frozen peas
  • 1 large carrot, shaved
  • 1 Tbsp butter
  • 3-4 Tbsp soy sauce
  • 1 Tbps sesame oil
  • 2 eggs
  • salt, pepper, garlic powder, red pepper flakes, to taste

Instructions

  1. Slightly thaw the frozen cauliflower by microwaving for 2-3 minutes.
  2. In a large pan, sautee frozen peas, shaved carrots, and cauliflower in butter for 3-4 minutes, until soft.
  3. Move vegetables to the side of the pan to create a hole in the center, then add sesame oil and 2 eggs to scramble.
  4. Once eggs are cooked, season with salt/pepper/garlic powder/red pepper flakes to taste. Drizzle soy sauce on top and stir to combine.
