Fried Cauliflower Rice
Ingredients
- 1 package frozen riced cauliflower
- 1/3 package frozen peas
- 1 large carrot, shaved
- 1 Tbsp butter
- 3-4 Tbsp soy sauce
- 1 Tbps sesame oil
- 2 eggs
- salt, pepper, garlic powder, red pepper flakes, to taste
Instructions
- Slightly thaw the frozen cauliflower by microwaving for 2-3 minutes.
- In a large pan, sautee frozen peas, shaved carrots, and cauliflower in butter for 3-4 minutes, until soft.
- Move vegetables to the side of the pan to create a hole in the center, then add sesame oil and 2 eggs to scramble.
- Once eggs are cooked, season with salt/pepper/garlic powder/red pepper flakes to taste. Drizzle soy sauce on top and stir to combine.
