Ham, Cheese & Broccoli Breakfast Casserole
Ingredients
- 1 Tbsp butter
- 10 large eggs
- 1 cup heavy cream
- 1 1/2 cups shredded cheddar, divided
- 1/2 cup grated parmesan cheese
- 1/2 tsp salt
- 1/4 tsp pepper
- 8 ounces ham, diced
- 3/4 head broccoli, cut into florets
- 1/2 onion, diced
Instructions
- Coat the inside of the slow cooker with the butter.
- Whisk together eggs, heavy cream, 1/2 cup cheddar cheese, Romano cheese, salt and pepper. Pour into slow cooker.
- Stir in the ham, broccoli and onion.
- Sprinkle the remaining 1 cup of cheddar cheese on top. Cover and cook for 6 hours on low or 3 hours on high.
Nutrition: serves 12; 300 calories, 5gm net carb, 20gm protein.
