Ham, Cheese & Broccoli Breakfast Casserole

Ingredients

  • 1 Tbsp butter
  • 10 large eggs
  • 1 cup heavy cream
  • 1 1/2 cups shredded cheddar, divided
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 ounces ham, diced
  • 3/4 head broccoli, cut into florets
  • 1/2 onion, diced

Instructions

  1. Coat the inside of the slow cooker with the butter.
  2. Whisk together eggs, heavy cream, 1/2 cup cheddar cheese, Romano cheese, salt and pepper. Pour into slow cooker. 
  3. Stir in the ham, broccoli and onion.
  4. Sprinkle the remaining 1 cup of cheddar cheese on top. Cover and cook for 6 hours on low or 3 hours on high.

Nutrition: serves 12; 300 calories, 5gm net carb, 20gm protein.
