Loaded Cauliflower Casserole
Ingredients
- 1 lb cauliflower florets
- 1 1/2 cups sharp shredded cheddar cheese, divided
- 1/2 cup sour cream
- 4 slices bacon, cooked crisp and crumbled
- 2 Tbsp chives
- 1/4 tsp garlic powder
- salt & pepper, to taste
Instructions
- Preheat oven to 350oF.
- Steam cauliflower florets until tender.
- Cream together sour cream and 1 cup cheddar cheese.
- Stir chives, crumbled bacon and garlic powder into the cheese/sour cream mixture.
- Combine cheese/bacon mixture with steamed cauliflower. Season with salt and pepper to taste.
- Pour into oven safe casserole dish and top with remaining cheddar cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake until cheese is brown and bubbly.
