Loaded Cauliflower Casserole

Ingredients

  • 1 lb cauliflower florets
  • 1 1/2 cups sharp shredded cheddar cheese, divided
  • 1/2 cup sour cream
  • 4 slices bacon, cooked crisp and crumbled
  • 2 Tbsp chives
  • 1/4 tsp garlic powder
  • salt & pepper, to taste

Instructions

  1. Preheat oven to 350oF.
  2. Steam cauliflower florets until tender.
  3. Cream together sour cream and 1 cup cheddar cheese.
  4. Stir chives, crumbled bacon and garlic powder into the cheese/sour cream mixture.
  5. Combine cheese/bacon mixture with steamed cauliflower. Season with salt and pepper to taste.
  6. Pour into oven safe casserole dish and top with remaining cheddar cheese. 
  7. Cover with foil and bake for 20 minutes. Remove foil and bake until cheese is brown and bubbly.
