Crock-Pot Granola
Ingredients
- 1/3 cup coconut oil
- 2 tsp vanilla extract
- 1/2 cup raw almonds
- 1/2 cup raw walnuts
- 1/2 cup raw pecans
- 1 cup sunflower seeds (no shell)
- 1 cup pumpkin seeds
- 1 cup unsweetened shredded coconut
- 1/4 cup Truvia baking blend
- 1 tbsp cinnamon
- 1 tsp salt
Instructions
- Turn crockpot on low and add coconut oil and allow it to melt.
- Once melted, mix in vanilla extract.
- Add in nuts, seeds and coconut and stir well to make sure it's evenly coated.
- Whisk Truvia sweetner, cinnamon and salt together and sprinkle over the nut/seed mixture.
- Cover and cook on low 2 hours, stirring every 30 minutes. Granola is done when it is fragrant and appears brown and toasted.
- Spread evenly on a baking pan to cool. Store in a covered container.
