Crock-Pot Granola

Ingredients

  • 1/3 cup coconut oil
  • 2 tsp vanilla extract
  • 1/2 cup raw almonds
  • 1/2 cup raw walnuts
  • 1/2 cup raw pecans
  • 1 cup sunflower seeds (no shell)
  • 1 cup pumpkin seeds
  • 1 cup unsweetened shredded coconut
  • 1/4 cup Truvia baking blend
  • 1 tbsp cinnamon
  • 1 tsp salt

Instructions

  1. Turn crockpot on low and add coconut oil and allow it to melt.
  2. Once melted, mix in vanilla extract.
  3. Add in nuts, seeds and coconut and stir well to make sure it's evenly coated.
  4. Whisk Truvia sweetner, cinnamon and salt together and sprinkle over the nut/seed mixture.
  5. Cover and cook on low 2 hours, stirring every 30 minutes. Granola is done when it is fragrant and appears brown and toasted.
  6. Spread evenly on a baking pan to cool. Store in a covered container.
