Fat Head Pizza Crust

Ingredients

  • 1 3/4 cup shredded mozzarella
  • 3/4 cup almond flour
  • 2 Tbsp cream cheese
  • 1 egg
  • 1/2 tsp garlic powder, italian seasoning, or other seasonings to taste
  • Toppings: 
    • 1/2 jimmy dean italian sausage
    • 24 pepperoni
    • 1 cup shredded mozzarella cheese

Instructions

  1. Mix the seasonings and almond flour in a microwaveable bowl. Add the shredded mozzarella cheese and cream cheese and microwave on high for 1 minute.
  2. Stir, then microwave on high for another 30 seconds- 1minute. 
  3. Add the egg and mix thoroughly.
  4. Place dough between 2 pieces of parchment paper flatten and spread out on cookie sheet. Remove the top piece of parchment paper. If the mixture hardens and becomes difficult to work with, pop it back in the microwave for 10-20 seconds to soften again.
  5. Make fork holes all over the dough to make sure it cooks evenly.
  6. Preheat oven to 425oF, bake for 12-15 minutes.
  7. To make the crust extra crispy, bake another 3-5 minutes. 
  8. Once cooked, remove from the oven and add your choice of toppings. Return to the oven for an additional 3-5 minutes, just long enough to heat the toppings and melt the cheese.

Nutrition (with recommended toppings above): serves 4; 530 calories, 10gm net carbs, 26gm protein.
