Meatball Parmigiana

Ingredients

Meatballs

  • 1.5 lbs ground Beef
  • 2 Tbsp Parsley, chopped
  • 3/4 cup Parmesan Cheese, grated
  • 1/2 cup Almond Flour
  • 2 Eggs
  • 1 tsp Kosher Salt
  • 1/4 tsp ground Black Pepper
  • 1/4 tsp Garlic Powder
  • 1 tsp dried Onion Flakes
  • 1/4 tsp dried Oregano
  • 1/2 cup warm Water

Parmigiana

  • 1 cup Marinara Sauce (we like Rao's)
  • 1/2 cup Mozzarella Cheese

Instructions

  1. Combine all of the meatball ingredients in a large bowl and mix well. Form into 2 inch meatballs. Bake at 350 degrees for 20 minutes OR fry in large skillet over medium heat until cooked through. 
  2. Once meatballs cooked, Spoon 1 Tbsp Marinara sauce over each meatball. Then cover with 1/4 oz Mozzarella cheese.
  3. Bake at 350 for 20 minutes or until cheese is golden brown. 
  4. Garnish with fresh Parsley.

Nutrition: serves 8; 500 calories, 5gm net carb, 45gm protein.
