Microwave Spaghetti Squash
Ingredients
- 1 spaghetti squash (2-3 lbs)
- 2 tsp olive oil
- salt and pepper, to taste
- 1/4 cup water
Instructions
- Place whole squash in a microwave-safe baking dish. Microwave for 5 minutes.
- Remove from microwave. *Squash will be hot!* Cut squash in half lengthwise and scrape out the seeds.
- Drizzle the inside of the squash with the olive oil and rub to cover. Add salt and pepper to taste.
- Place squash halves, cut side down, back in the microwave-safe dish. Add water.
- Microwave an additional 5-10 minutes or until tender. Allow to cool and separate the strands of squash with a fork.
