Microwave Spaghetti Squash

Ingredients

  • 1 spaghetti squash (2-3 lbs)
  • 2 tsp olive oil
  • salt and pepper, to taste
  • 1/4 cup water

Instructions

  1. Place whole squash in a microwave-safe baking dish. Microwave for 5 minutes.
  2. Remove from microwave. *Squash will be hot!* Cut squash in half lengthwise and scrape out the seeds. 
  3. Drizzle the inside of the squash with the olive oil and rub to cover. Add salt and pepper to taste.
  4. Place squash halves, cut side down, back in the microwave-safe dish. Add water.
  5. Microwave an additional 5-10 minutes or until tender. Allow to cool and separate the strands of squash with a fork.
