Oven Roasted Veggies

Ingredients

  • Broccoli, 1 head chopped
  • Carrots, 5 large peeled/chopped
  • Red Onion, 1 large chunky chopped
  • Olive Oil, 3 Tbsp
  • Salt/Pepper
  • Other Optional Veggies:
    • Green Beans
    • Cauliflower
    • Mushrooms
    • Brussel Sprouts
    • Asparagus
    • Zucchini

Instructions

  • Pre-heat oven to 375 degrees. Place parchment paper over cookie sheet.
  • Chop veggies- spread over cookie sheet.
  • Drizzle olive oil, season with salt/pepper or other seasonings desired.
  • Bake at 375 for 20-30 minutes or until veggies caramelized.
