Pepperoni (no pasta) Salad

Ingredients

  • 3 cups diced roma tomatoes
  • 1/2 cup chopped red onion
  • 1 cup chopped cucumber
  • 2 ounces sliced olives
  • 6 string mozzarella cheese
  • 1/3 cup sliced pepperoni
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon italian seasoning

Instructions

  1. In a bowl, combine the tomatoes, onion, cucumber, and olives. Cut the string cheese into bite size pieces. Add to the bowl along with the sliced pepperoni. Set aside. 
  2. In small bowl, mix the vinegar, oil, garlic, and seasoning. Pour over the salad and mix to coat. 
  3. Refrigerate the salad until serving.

Nutrition: serves 6; calories 220; 3gm net carbs; 10gm protein.
