Pizza Casserole

Ingredients

  • 1 can diced tomatoes
  • 12 oz uncooked Italian sausage
  • 1 Tbsp olive oil
  • 1/2 tsp dried oregano
  • salt & pepper, to taste
  • 8-12 oz fresh mushrooms, washed and cut into thick slices
  • 1 1/2 cups grated mozzarella cheese
  • 15 slices pepperoni, cut in half

Instructions

  1. Preheat oven to 400o F. Spray an 8x11 casserole dish with non-stick spray or olive oil.
  2. Pour the diced tomatoes into a colander and rinse with cold water. Let drain and spread on paper towels to dry.
  3. While tomatoes are drying, heat a large non-stick pan and cook sausage over medium-high heat until browned and crumbled.
  4. While sausage is cooking, wash mushrooms, pat dry, and cut into thick slices.
  5. Layer casserole dish with sausage and tomatoes, and season with oregano, and salt and pepper to taste.
  6. Rinse pan that had the sausage, then heat olive oil over medium-high heat. Add mushrooms and cook, stirring a few times, until the mushrooms start to brown. Layer mushrooms over the sausage/tomato mixture in the casserole pan.
  7. Sprinkle the mozzarella cheese over top of the sausage/tomato/mushrooms, and top with pepperoni.
  8. Bake about 25 minutes, or until the cheese is melted and starting to brown.
