Pumpkin Cake
Ingredients
Cake Layer
- 5 eggs, beaten
- 1 cup olive oil
- 1 cup brown sugar swerve
- 1 cup pumpkin puree
- 2 cups almond flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pice spice
- 1 teaspoon cinnamon
Frosting
- 16 ounces cream cheese, softened
- 8 tablespoons butter, softened
- 1 cup powdered sugar substitute (swerve)
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 10 drops liquid stevia
- (optional 1-2 tablespoon unsweetened almond milk)
Instructions
Preheat oven to 350 degrees and grease regular size baking sheet.
Cake Layer
- In large bowl, add eggs, olive oil, brown sugar substitute, and pumpkin puree. Beat with mixer until well combined.
- In medium bowl, mix almond flour, baking soda, baking powder, salt, and spices. Combine well.
- Add dry mixture to egg mixture and beat together with mixer.
- Pour evenly in greased baking sheet and bake for 25-30 minutes.
Frosting
- Mix all ingredients in medium bowl and beat with hand beater.
- (Option to add 1-2 tbsp Almond Milk if needed to thin out the frosting)
Keep Refrigerated.
