Pumpkin Cake

Ingredients

Cake Layer

  • 5 eggs, beaten
  • 1 cup olive oil
  • 1 cup brown sugar swerve
  • 1 cup pumpkin puree
  • 2 cups almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pice spice
  • 1 teaspoon cinnamon

Frosting

  • 16 ounces cream cheese, softened
  • 8 tablespoons butter, softened
  • 1 cup powdered sugar substitute (swerve)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 10 drops liquid stevia
  • (optional 1-2 tablespoon unsweetened almond milk)

Instructions

Preheat oven to 350 degrees and grease regular size baking sheet.

Cake Layer

  • In large bowl, add eggs, olive oil, brown sugar substitute, and pumpkin puree. Beat with mixer until well combined. 
  • In medium bowl, mix almond flour, baking soda, baking powder, salt, and spices. Combine well. 
  • Add dry mixture to egg mixture and beat together with mixer.
  • Pour evenly in greased baking sheet and bake for 25-30 minutes. 

Frosting

  • Mix all ingredients in medium bowl and beat with hand beater. 
  • (Option to add 1-2 tbsp Almond Milk if needed to thin out the frosting)

Keep Refrigerated.
