Shrimp & Sausage Skillet

Ingredients

  • 1 lb medium or large raw shrimp, peeled and deveined
  • 6 oz pre-cooked smoked sausage, chopped
  • 3/4 cup red bell pepper, diced
  • 3/4 cup green bell pepper, diced
  • 1/2 cup yellow onion, diced
  • 1/4 cup chicken broth
  • 1 medium zucchini, chopped
  • 2 cloves garlic, minced
  • salt & pepper, to taste
  • red pepper flakes, to taste
  • 2 tsp Old Bay Seasoning
  • 1 Tbsp olive oil

Instructions

  1. Heat a large skillet over medium-high heat with the olive oil.
  2. Season shrimp with Old Bay seasoning.
  3. Cook shrimp about 3-4 minutes, until opaque. Remove and set aside.
  4. In the same pan, saute onions and peppers for about 2 minutes. 
  5. Add sausage and zucchini and cook another 2 minutes. 
  6. Put cooked shrimp back into the skillet along with the garlic and cook an additional 1 minute.
  7. Add chicken stock to the skillet and mix through to moisten everything.
  8. Add salt, pepper, and red pepper flakes to taste. Remove from heat and serve hot.
