Shrimp & Sausage Skillet
Ingredients
- 1 lb medium or large raw shrimp, peeled and deveined
- 6 oz pre-cooked smoked sausage, chopped
- 3/4 cup red bell pepper, diced
- 3/4 cup green bell pepper, diced
- 1/2 cup yellow onion, diced
- 1/4 cup chicken broth
- 1 medium zucchini, chopped
- 2 cloves garlic, minced
- salt & pepper, to taste
- red pepper flakes, to taste
- 2 tsp Old Bay Seasoning
- 1 Tbsp olive oil
Instructions
- Heat a large skillet over medium-high heat with the olive oil.
- Season shrimp with Old Bay seasoning.
- Cook shrimp about 3-4 minutes, until opaque. Remove and set aside.
- In the same pan, saute onions and peppers for about 2 minutes.
- Add sausage and zucchini and cook another 2 minutes.
- Put cooked shrimp back into the skillet along with the garlic and cook an additional 1 minute.
- Add chicken stock to the skillet and mix through to moisten everything.
- Add salt, pepper, and red pepper flakes to taste. Remove from heat and serve hot.
