Shrimp Scampi with Zucchini Noodles

Ingredients

  • 1 Tbsp unsalted Butter
  • 1 Tbsp Olive Oil
  • 4 Cloves Garlic, minced
  • 1 Lb Large Shrimp, peeled and deveined
  • 1 tsp Salt
  • 1/2 tsp Red Pepper Flakes
  • 1/4 tsp Black Pepper
  • 1/4 Cup Chicken Broth
  • Zest of 1/2 Lemon
  • 1/4 Cup squeezed Lemon Juice
  • 4 Medium Zucchini, spiralized into noodles
  • 1/4 Cup chopped fresh Parsley Leaves
  • 2 Tbsp grated Parmesan Cheese

Instructions

  • Heat Butter and Olive Oil in large skillet over medium-low heat. Add the Garlic and cook 30 seconds. Add the Shrimp and season with Salt, Red Pepper Flakes, and Black Pepper. Saute for 3 minutes, until shrimp beginning to cook but are still translucent. 
  • Add the Chicken Broth, Lemon Zest, and Lemon Juice. Bring to boil and cook for 1 minute, just until shrimp is cooked through.
  • Stir in the Zucchini Noodles and Parsley. Toss the noodles with the shrimp so they are coated with the garlic-lemon sauce and heat until warmed through. (Do not overcook Zucchini noodles! They will become mushy and watery.)
  • Sprinkle with Parmesan and Serve warm.
