Slow Cooker Beef Stew
Ingredients
- 2 lbs beef chuck or top round, cubed
- 3 Tbsp olive oil
- 2 cups beef stock
- 1/2 cup mushrooms, sliced
- 2 ribs celery, chopped
- 1 large carrot, chopped
- 1 small yellow onion, chopped
- 1/2 cup small radishes, cut in half
- 1/2 cup cut green beans
- 4 cloves garlic, minced
- 2 Tbsp tomato paste
- 2 tsp salt
- 2 tsp black pepper
- 1 tsp onion powder
- 1 tsp dried oregano
Instructions
- In a large skillet over medium heat, sear the beef cubes in olive oil, browning on all sides. Transfer to slow cooker.
- To the slow cooker, add all remaining ingredients.
- Cover and cook on low for 6-8 hours.
