Slow Cooker Beef Stew

Ingredients

  • 2 lbs beef chuck or top round, cubed
  • 3 Tbsp olive oil
  • 2 cups beef stock
  • 1/2 cup mushrooms, sliced
  • 2 ribs celery, chopped
  • 1 large carrot, chopped
  • 1 small yellow onion, chopped
  • 1/2 cup small radishes, cut in half
  • 1/2 cup cut green beans
  • 4 cloves garlic, minced
  • 2 Tbsp tomato paste
  • 2 tsp salt
  • 2 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp dried oregano

Instructions

  1. In a large skillet over medium heat, sear the beef cubes in olive oil, browning on all sides. Transfer to slow cooker.
  2. To the slow cooker, add all remaining ingredients.
  3. Cover and cook on low for 6-8 hours.
