Sugar Cookie Bars

Ingredients

Bars

  • 2 cups almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 6 tbsp butter, softened
  • 1/4 cup granulated Swerve sweetener
  • 1 large egg
  • 1 tsp vanilla extract

Frosting

  • 1/4 cup butter, softened
  • 1/2 cup powdered Swerve sweetener
  • 1/2 tsp vanilla extract
  • 2 - 3 tbsp milk
  • optional: food coloring

Instructions

For the bars:
1. Preheat oven to 325o and line an 8x8 inch pan with parchment paper.
2. In a bowl, whisk together almond flour, salt, and baking powder. In a separate bowl, beat butter and Truvia until creamy. Beat in the egg and vanilla extract, then the almond flour mixture until dough comes together.
3. Press dough firmly into prepared pan and smooth the top with a flat bottomed glass. Bake 30 minutes, until just golden brown around the edges and slightly firm to the touch. Remove and let cool in the pan.

For the icing:
1. Beat together butter and sweetener.
2. Add milk, 1 tbsp at a time, until desired consistency. Stir in vanilla and food coloring.
3. Spread onto cooled bars.
