4 seasoned Chicken Breast
3 Tbsp Butter
½ cup Chicken broth
1 cup Heavy Cream
1 can (4 oz) Pimentos
1 cup diced Tomatoes, or 1 can diced Tomatoes
¼ cup Basil, fresh, minced
½ cup Parmesan; grated
2 Tbsp Cream Cheese
1 tsp Pepper
1. Heat skillet over medium- high heat with ½ of the butter.
2. Add seasoned Chicken to skillet and cook on one side for 5 minutes.
3. Add remaining butter, flip Chicken and cook for another 5-8 minutes or until Chicken is cooked.
4. Remove Chicken and set aside.
5. Add Broth to skillet, bring to boil over medium heat.
6. Stir in Cream, Pimentos, and Tomatoes; Boil and stir for 1 minutes.
7. Reduce heat, add Parmesan cheese, Cream Cheese, Basil, and Pepper; cook and stir until heated through and cheese has melted. Do not boil.
8. Add the Chicken back into sauce.
9. Serve covered in sauce with Veggies on the side.
