Tuna & Avocado Salad

Ingredients

  • 16 oz canned Tuna
  • 2 medium Avocados, chopped
  • 4 hard boiled Eggs, chopped
  • 2 stalks Celery, chopped
  • 1/8 Onion, chopped
  • 1 tbsp minced Parsley
  • 6 tbsp Mayonnaise
  • 2 tbsp Mustard
  • Salt and Pepper

Instructions

  • In mixing bowl, break up the tuna with a fork. Toss with avocados, hard boiled eggs, celery, onion, and parsley.
  • Add mayonnaise, mustard, and season with salt and pepper, to taste. 
  • Eat out of bowl, serve as lettuce wrap or with low carb tortilla. 

Nutrition: serves 4; 448 calories, 2gm net carbs, 28gm protein.
